– Instructions

1. Cook the Linguine

Bring a large pot of salted water to a boil

Add the linguine and cook according to the package instructions until al dente (usually around 8-10 minutes)

Reserve 1/2 cup of pasta water, then drain the pasta and set aside

2. Prepare the Tuna and Capers Sauce

In a large pan, heat the olive oil over medium heat

Add the minced garlic and chopped onion, sautéing until the onion becomes translucent and the garlic is fragrant, about 3-4 minutes

If you like some heat, add the red pepper flakes at this point and cook for an additional 30 seconds

3. Add Tuna and Capers

Add the flaked tuna and capers to the pan, stirring to combine

Sauté for 2-3 minutes until the tuna is warmed through

If using, add the cherry tomatoes and white wine. Cook for 3-4 minutes, allowing the wine to reduce slightly and the tomatoes to soften

4. Add Lemon Zest and Juice

Stir in the lemon zest and juice. This adds brightness to the dish

Season with freshly ground black pepper and salt (go easy on the salt because capers and tuna are already salty)

5. Combine the Pasta with the Sauce

Add the drained linguine to the pan with the tuna sauce

Toss everything together, adding the reserved pasta water little by little to help create a light sauce that coats the pasta

Continue tossing for 1-2 minutes until the pasta is fully coated and the ingredients are well mixed

6. Serve

Remove the pan from heat and stir in the chopped parsley

Optionally, sprinkle with grated Parmesan cheese before serving

Serve immediately with an extra drizzle of olive oil, if desired

Enjoy your flavorful Linguine with Tuna and Capers
